It's not really hard and fast for me. But with a particularly viscous sauce, like spaghetti sauce that's been simmering all afternoon, I prefer it over the top. Something thin can work better mixed through.

BamaDan, as much as I like Italian food, I'm not a huge eggplant fan either. I'll eat it in polite company, but I wouldn't ever choose it.

"Tomato sauce over noodles? That's what the poor mountain-folk eat." - my Italian neighbor Neris as she delivers homemade/homegrown Eggplant Parmisian to Mrs. BD.

But I don't dig on the eggplant.

The many family dinners, where the heavily-accented conversation is held at around 80 decibels, and concludes with every female relative you have asking you why you're starving yourself after you've consumed enough carbohydrates to satisfy the offensive line of any Div-I football team.

*ahem*

Italian-American households are very likely to mix the pasta with a minimum amount of sauce and serve that family style. Extra sauce is grudgingly passed if you feel you need it to drown out the taste of the pasta your grandmother spent all day making for you, side of guilt no extra charge.

Ask me how I know this.
